Yep, economics. The story follows a traveling merchant name Lawrence (the white haired dude) who Holo joins on his travels. So a lot of the show centers around Lawrence explaining economic theory to Holo. In fact in the first arc of the second season Lawrence gets into a financial duel with another merchant (I know it sounds ridiculous but the show pulls it off) as a result Lawrence pretty much singlehandedly crashes the town's economy.

This all sounds really boring but the show makes it very entertaining. It really helps that Holo and Lawrence have an amazing chemistry and make for some of the best written dialogue I've ever seen. So what would normally be a boring lecture on economics is a witty discussion between two really likable characters.

Fair warning, Holo is naked in the first 1 and 1/2 episodes, though it's artistic nudity, you can't see anything and it's not grotesque. It in generally is done with respect for her character. However once you get past that point I'm about 90% sure she stays clothed the rest of the series.

That being said it's a wonderful series and out of the over 100 I've seen, Spice and Wolf is my favorite (note that I did not say best, though it still up there even then). Also if you can, watch the english dub as it's one of the best english dubs ever. Also you can watch it on Hulu or Netflix.

That sounds a little bit like what happened in Maoyu, where a merchant with regional power pre-purchased all the nations food and horded it next season, which in turn deflated the national currency.

Shit like this is why I watch anime.

Well there's a reason for that. Maoyu was written by the same guy that did Spice and Wolf. Also the demon king was voiced by the person who did Holo and the hero was voiced by the guy who did Lawrence. It was like Spice and Wolf season 3 minus the two characters that were literally Spice and Wolf.
